Is there a version of SDL3 that targets embedded hosts so for example running it with a custom OS on bare hardware?

The really interesting thing to do would be to re-target it back at the original hardware ;)
I've also thought about running it on smaller systems like an ESP32 with an e-ink or lcd display

Great. Thanks.

Currently everything is working reasonably well there, but the hand writing recognition is really flakey there (more so than I remember on the real device)
SDL3 runs in the reMarkable as a standalone (terminal) app, or as a cooperative desktop app. It solves pen input and timer bases as well, so maybe that helps with your HWR issues.
I did look into alternative HWR libraries. There is great stuff out there that works great with the vector data that the pen produces (vs. pixel maps). One or two have non-commercial licenses. If you are interested, I'll try to find my notes.
