Thank you Matthias, that worked.  I line copied the text I wanted hit command S and it put it in the little pasting blurb, and then Command V for paste into the text editor on the Mac.  Nice!

Thanks for walking me through this.  This makes taking notes on Einstein WAY more useful.  :)

You can select the text that you want to copy (long tap, draw ove the selection), and then move the selection to the side of the Einstein screen, just as if your would copy/paste on a Newton device.

As soon as your selection appears as a floating tag on the side, Einstein will copy the text into the paste buffer. So you can activate any other window on your computer, press Ctrl-V/Cmd-V, and your Newton/Einstein selection will appear in your text window.
