It’s true that the process is different now. 

My wife just bought me an iPad Mini with Pencil for my birthday, maybe I should make a new tutorial!

I can’t help with transferring data, but that sounds like an interesting challenge also. I have never tried to connect NCX to an Einstein Newton, wasn’t sure it was possible or not. Without an ethernet card you can still sync to NCX if you have a compatible serial cable and Interconnect dongle. Then you would have to somehow get NCX to talk to Einstein over the network.
