Check out http://www.unna.org/view.php?/development/source . It has a few projects including source code.

The NewtonDev archive contains a bunch of minimal sample apps that were published by Apple to explain certain features of the OS: http://www.unna.org/view.php?/development/NewtonDev IIRC in the "Sample Code" folder.
